 Holiday Shortbread Tidbits


Shortbread has always been a favorite in our home; hubby is Scottish and it's his favorite!  I made many batches of these little bites this holiday and thought it would be a good recipe to share.


Ingredients

1 cup (2 sticks) unsalted butter, softened at room temperature

1/2 cup granulated sugar

1/2 tsp. Almond extract

2 1/2 cups King Arthur all-purpose flour

1/2 tsp. Kosher salt

2 T + 2 tsp. multi-colored nonpareils


Step 1

Heat oven to 325-degrees F.  Line a 8-inch square baking pan with plastic food wrap, leaving at least 1-inch overhang.  Line baking sheets with parchment paper.  Set aside.



Step 2

In a stand mixing bowl, combine the butter, sugar and almond extract.  Beat at medium speed, scrapping the bowl often, until creamy.  Reduce speed to low add flour, salt, and nonpareils.  Mix until combined.


Step 3

Knead the mixture 4 to 5 times in the bowl until dough forms a ball.  Pat the dough evenly into the prepared pan--I used a measuring cup to press the dough firmly into the pan.  Use the plastic wrap to life dough from pan.  Cut dough into 1/2-3/4-inch squares.  Gently place squares onto parchment-lined baking sheets.  Bake 13-15 minutes or until bottoms are just beginning to brown.






These tidbits make a great gift filled in a decorative glass or mug for neighbors, teachers, or importantly, Front-Line Workers! Enjoy!

  3. I am so happy to see you!!! I still treasure and wear the apron I won in your giveaway a few years ago and think of you every time I put it on!
    Thank you for this recipe and my Louis Dean loves shortbread cookies best of all cookies!!! I will be making these this month and dropping care packages off to shut ins.....and there are so many shut ins these days!!!

    1. Shortbread seems to be everyone's favorite and I've come up with a few unique ones that I will share. I like to still give away baked goods to people too. You're right, too many shut in during this pandemic!

    1. It's been a busy 6 years; building a new home, starting with a new company and last year, changing to another new company, Spellbinders, to license my designs for 3-dimensional flowers. These past 10 months, I've done a lot of baking and gotten back to quilt making, with a record (for me) of 8 quilts completed. I'm ready for new beginnings in 2021 and praying we all get through this pandemic!

  6. Dear Susan, I have long been a fan of your beautiful floral designs, but it never occurred to me that you had a blog I could visit! I was so happy to find this recipe. The last time I made shortbread was 19 years ago. I had just finished a batch when my brother-in-law, Brad Hurney, showed up at our house unexpectedly, at just the right time to help my husband push our incapacitated car into our garage. Brad was one of those people that would give you the shirt off of his back, and it was so like him to just show up out of nowhere, unannounced, to help in the situation. As he came into the house through the kitchen, he said, "Shortbread...my favorite!", grabbed several pieces and we talked while he sat and enjoyed them. It was just a few weeks later that he was killed in a car accident, and I've not had the heart to make shortbread ever since. But after reading your recipe, and the comments here, something spoke to my heart, and I'm excited to give these a try! I'm so glad to see that you've returned to blogging after a long hiatus. Thanks for the inspiration.
