Give It Your All Cookies

Tomorrow would have marked my mother's ninety-fourth birthday; she passed away in 1987 at the age of 67 from a brain tumor and there isn't a day that goes by that I don't miss her and her words of wisdom.  Today, I was inspired by some of those words..."no matter what, Give It Your All!"

I've lived those words all my life and they have served me well.  However, it wasn't just her words that inspired me with this recipe, but her kooky food combinations.  This woman ate Cheetos & Marshmallow Fluff, Chocolate & Potato Chips (okay, that one I also like) and who do you think got me hooked on Peanut Butter & Pickle.  Yes, that would be Mom.  So these cookies represent those unusual combinations that are waiting to be discovered.  Today, they started with a new candy out by Butterfinger--Peanut Butter Cups and Toasted Hazelnut Flour.


Give It Your All Cookies
1 cup (2 sticks) unsalted butter, at room temperature
1 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 large egg + 1 large egg yolk
1 T Vanilla extract
1/2 cup Toasted Hazelnut Flour
2 1/2 cups King Arthur all-purpose flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1 cup Cocoa Krispies
4 pkgs. Butterfinger Peanut Butter Cups, chopped
1/2 cup pretzels, crushed

Preheat the oven to 350F-degrees.  Line a baking sheet with parchment paper.
In a stand mixer, cream the butter and sugars together thoroughly.  Add the egg and a yolk and mix again.  Add the vanilla and beat until fluffy, scraping down the sides of the bowl as needed.

Mix together the dry ingredients and add to the dough.  Mix on medium speed to combine.  Add the Cocoa Krispies and crushed pretzels and blend together.  Finally, stir in the chopped Butterfinger pieces.  The dough will be stiff.

Use a 1/4 or 1/3 cup scoop to divided dough.  Flatten slightly with your fingers.

Bake in the preheated oven for 12 minutes.  Allow to rest a few minutes before transferring to a rack to cool completely.  The recipe makes 3 1/2 dozen 2 1/2" cookies.
I could have jammed a lot more ingredients in these (i.e., coconut, dried cherries, even oatmeal) but I figured I had given them my all and like what I had combined:-D

  1. Much much too young Susan....I said the same when my Dad passed away as it was also when he was 67 years old...too young and unexpected. A wise mother ....and look what she taught you....how wonderful.

  3. My Mom has been gone a long time too. The time has passed, but I do still miss her as well. I was only in my 20's when she passed away, so I've lived most of my life without a Mom. I am thankful for the loving older ladies who stood in her place, but it still does not fill the hole she left behind.

  5. I loved this post. Memories of your mother and the things she enjoyed. I suppose it's a good thing to have the memories, but some days, I wish very hard that my mother was still with me. Cookies sound scrumptious!

  6. what a fun combination of ingredients for these cookies. only thing I would change is the cocoa rice krispis to regular...you know mean easy does it on the chocolate.

  11. I still miss my mother and it has been 32 years. My mom lived to be 49 and passed away from a heart condition. I was pregnant with Jennifer when she passed and Jen was born10 days later.
